Cheeky Chicken: Chunks of chicken and green and yellow beans in a red sauce.
Everything tastes better in a good tomato sauce. Chicken, softly cooked in a tomato sauce, served with tender beans is surely a great summer dish. Served with aromatic basil, intense garlic and soft parmesan this 15 minute dish is worth trying.
Time is, again, a scarce resource. So scarce, in fact, that these words will need to suffice.
Be adventurous, in your choice of beans. Just make sure they are fresh. This might go very nicely with a bit of ricotta or could be gratinéd under a hot grill.
Chicken and beans in red sauce
Tomatoes Beans Chicken (breast) Parmesan Garlic Pepper Salt Sugar Olive Oil Basil
Wash and pat dry the chicken breast. Cut into bite size pieces. In a large pan with boiling water (salt and sugar added) cook the beans til cooked but still firm. Cut the tomatoes into small chunks. In a hot non-stick pan, with a bit of olive oil, fry the chicken chunks til brown and remove from the pan. Add the tomatoes to the pan and let cook for about 5 minutes, add sliced garlic to the pan. Season with salt and a pinch of sugar. Add the cooked beans to the pan and, on reduced heat, let cook for about a minute. Add a hand full of grated parmesan, give a fast stir and add the browned chicken chunks. Let cook for about 5 minutes (or until the chicken chunks are cooked through). Chop the basil finely and, right before serving, add to the dish. Now, just before serving, add a bit of pepper. Adjust seasoning if necessary and enjoy yourself.
